Burger.

Last night I tried out a new recipe- one that will definitely have a regular rotation in our household.


Spicy Black Bean Burgers

I changed up the recipe a bit because I didn't want to run to the store but this is what I did... and used... and how I made them. :)

Ingredients:

16 oz corn of black beans, rinsed and drained
1/2 bell pepper, (I used green, they use red)
1 small jalapeno, (I added this)
1 banana pepper (I added this)
1/2 cup chopped scallions
3 tbsp cilantro (I did not use because I do not like.)
3 cloves garlic
1 egg
1/4 tsp salt
1 tbsp cumin
1 tsp hot sauce (tabasco all the way)
1/2 cup quick oats
1 small avocado sliced

First off rinse and drain the black beans, set aside. Roughly chop the peppers, scallions, and garlic. In a food processor finely chop these ingredients with the seasonings. Then add the egg and oats, pulse a few times and add the black beans for a few pulses (the recipe says to mash with a fork but whatevs, this was easier).






Then you need to start making the patties.. Just pat those things out until they resemble hamburgers and place on waxed or parchment paper and place in the freezer for an hour or so.. You can also freeze these for weeks and grab when you want to cook them. Cook them on a flat griddle or frying pan for 7 minutes on each side on medium heat. I placed them in 275 degree oven to continue to cook for about 10 minutes because I wanted them super crunchy and yummy.

We used sourdough bread because we never ever buy regular bread. I topped with pepper jack cheese and jalapeno relish. Yummy!!
