Here's what is planned on our Food Agenda:
Monday: Shrimp Stir Fry with snow peas, bell peppers, green beans, cabbage, carrots, broccoli, and cauliflower. Will be using coconut oil as the "fat" and won't be using rice as the base. Should be fun.
Tuesday: Pesto Chicken over Spaghetti Squash "Pasta". Will add some fresh basil and a bit of freshly grated parmesan. Yummo!
Wednesday: Smoked Paprika Salmon over Sauteed Spinach. This should be super yummy!
Thursday: Ground Turkey "Sliders" with Spicy Avocado Slaw. And this will be B's favorite.
Geez- All this meal planning is making me super hungry. I might just have to grab a tangerine or some almonds to repress this hunger... Yeah, it will totally work. HA!
