Oatmeal cravings

One of my favorite snacks lately has been oatmeal. I know that some people think oatmeal is disgusting but for someone who is trying desperately to not eat the small pints of Ben & Jerry's that are currently living in the freezer, I will take what sugar I can get. I know that "pints" should not be considered small per se, but really those things imitate bowls, and bowls are a serving size. Can't follow my ice cream serving size logic? Yeah, neither can I.

On to the main attraction. The oatmeal. Here is a pic of last night's version. Appetizing huh?!?

That orange glob isn't baby food... It's pumpkin butter and it is amaze-balls.
Here's what you need and what ya do:

Place 1/2 cup organic oats in bowl and add 1/2 cup fat free milk (you use coconut or almond as well) and place in microwave for two minutes. Take out and put a tablespoon of dark brown sugar, a few dashes of pumpkin pie spice, and a small squirt of agave nectar. Top with chopped up apple a handful of almonds (or walnuts) and a spoonful of pumpkin butter. Stir up and dig in.

This was a delish dessert substitute for the Haagan Daaz Spiced Caramel Biscuit ice cream that I was craving. Can anyone tell I am in a major fall moment right now? I'm actually really ready for Fall, the holidays, whatevs. So much so that Sunday night I made my husband put on Bing Crosby holiday Pandora station while we cooked dinner and then yesterday I bought a holiday Christmas puzzle. Can someone recommend a good therapist in the Little Rock area? Thanks in advance!

Happy Tuesday folks!
